  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup turkey bacon, chopped
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in potatoes and chicken broth; bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes or until potatoes are tender.
