  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 8 ounces rice noodles
  • 1 cup sliced bell peppers
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh basil, for garnish

Instructions

  1. In a large pot, heat the red curry paste over medium heat.
  2. Add the coconut milk and vegetable broth and stir well.
  3. Bring the mixture to a simmer and add the rice noodles, cooking for about 5 minutes.
  4. Add the bell peppers and mushrooms, cooking until tender.
