  • 1 bell pepper, sliced
  • 1 cup cherry tomatoes

  • 1 tablespoon lime juice
  • fresh cilantro for garnish

Instructions

  1. In a large skillet, heat oil over medium heat.
  2. Add chopped onion and minced garlic; sauté until fragrant.
  3. Stir in red curry paste and cook for 1 minute.
  4. Add bell pepper and cherry tomatoes; cook until softened.
  5. Pour in coconut milk and fish sauce; bring to a simmer.
  6. Add cod fillets to the skillet; cook until fish flakes easily with a fork.
  7. Finish with lime juice and garnish with fresh cilantro before serving.
