- 2 cups basmati rice
- 4 cups water
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/4 cup fresh parsley, chopped
- Rinse the basmati rice under cold water until the water runs clear.
- In a pot, heat the olive oil over medium heat.
- Add the rinsed rice and sauté for 2-3 minutes.
- Stir in the water, lemon juice, lemon zest, salt, pepper, cumin, and paprika.
- Bring to a boil, then cover and reduce heat to low.
- Cook for 15-18 minutes until the rice is fluffy and water is absorbed.
- Remove from heat and let it sit for 5 minutes.
- Fluff the rice with a fork and garnish with fresh parsley before serving.
