Fragrant Spiced Mediterranean Lemon Rice

  • 2 cups basmati rice
  • 4 cups water
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a pot, heat the olive oil over medium heat.
  3. Add the rinsed rice and sauté for 2-3 minutes.
  4. Stir in the water, lemon juice, lemon zest, salt, pepper, cumin, and paprika.
  5. Bring to a boil, then cover and reduce heat to low.
  6. Cook for 15-18 minutes until the rice is fluffy and water is absorbed.
  7. Remove from heat and let it sit for 5 minutes.
  8. Fluff the rice with a fork and garnish with fresh parsley before serving.

  • For a spicier version, add a pinch of red pepper flakes.
