  • 1/2 cup molasses
  • 1/4 cup vegetable oil
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, baking soda, salt, and spices.
  3. In another bowl, combine the molasses, vegetable oil, buttermilk, and eggs.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fill each muffin cup about two-thirds full with the batter.
  6. Bake for 15-20 minutes, or until a toothpick inserted comes out clean.
  7. Let cool before glazing.

Notes

  • For extra flavor, add chopped nuts or chocolate chips to the batter.
