  • 2 pounds ripe tomatoes
  • 4 slices turkey bacon
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried basil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast for 25-30 minutes.
  3. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  4. In the same pot, add chopped onion and garlic; sauté until translucent.
  5. Add roasted tomatoes and vegetable broth to the pot. Bring to a simmer and cook for 10 minutes.
  6. Blend the soup until smooth, then stir in heavy cream and basil.
  7. Garnish with crumbled turkey bacon before serving.

  • This soup can be made ahead of time and reheated before serving.
