- 2 pounds ripe tomatoes
- 4 slices turkey bacon
- 1 large onion, chopped
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried basil
- Salt to taste
- Pepper to taste
- Preheat the oven to 400°F (200°C).
- Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil, salt, and pepper. Roast for 25-30 minutes.
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add chopped onion and garlic; sauté until translucent.
- Add roasted tomatoes and vegetable broth to the pot. Bring to a simmer and cook for 10 minutes.
- Blend the soup until smooth, then stir in heavy cream and basil.
- Garnish with crumbled turkey bacon before serving.
