  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cucumber, grated
  • 1 tomato, diced
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 tablespoon olive oil

Instructions

  1. In a bowl, mix ground beef with garlic powder, onion powder, oregano, salt, and pepper.
  2. Shape into meatballs and bake at 400°F for 20 minutes.
  3. In another bowl, combine cooked rice, Greek yogurt, lemon juice, and grated cucumber.
  4. Prepare a salad with diced tomatoes, cucumbers, and bell pepper dressed with olive oil.
  5. Serve meatballs on a bed of tzatziki rice, topped with fresh veggies.

Notes

  • For extra flavor, add chopped parsley to the meatball mixture.
