Greek Orzo Pasta Salad

This Greek Orzo Pasta Salad features turkey bacon and fresh veggies for a delicious and easy side dish.

Ingredients

  • 2 cups orzo pasta
  • 4 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy. Remove from skillet and crumble.
  3. In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  4. Add the crumbled turkey bacon to the bowl.
  5. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Chill in the refrigerator for about 30 minutes before serving.

Notes

  • For added flavor, marinate the salad for a few hours before serving.
  • Swap turkey bacon for regular bacon if preferred.
