  • 12 ounces cheese tortellini
  • 4 slices turkey bacon
  • 4 ounces chicken ham
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a pan, cook turkey bacon until crispy, then chop into pieces.
  3. In a large bowl, combine the cooked tortellini, turkey bacon, chicken ham, cherry tomatoes, cucumber, red onion, and olives.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Garnish with feta cheese before serving.

Notes

  • For an extra kick, add some crushed red pepper flakes.
  • This salad can be served cold or at room temperature.
