Green Enchiladas with Chicken

Delicious and comforting green enchiladas filled with chicken, perfect for any occasion.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup green enchilada sauce
  • 1 cup shredded cheese
  • 10 corn tortillas
  • 1/2 cup diced onions
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the shredded chicken, onions, cilantro, cumin, and garlic powder.
  3. Soften the corn tortillas by wrapping them in a damp paper towel and microwaving for 30 seconds.
  4. Spread a small amount of green enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the chicken mixture, roll them up, and place seam-side down in the baking dish.
  6. Top the rolled enchiladas with remaining enchilada sauce and sprinkle cheese on top.
  7. Bake for 20-25 minutes or until cheese is bubbly.

Notes

  • For a spicier version, add diced jalapeños to the filling.
  • Feel free to use leftover turkey if you have it on hand.
