  • 1 cup chickpeas
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Soak the chickpeas overnight.
  2. In a large pot, heat the olive oil over medium heat and sauté the onions until translucent.
  3. Add the tomatoes and cook until softened.
  4. Add the lentils, chickpeas, and all spices, stirring well.
