Healthier Broccoli Chicken Casserole

A healthier twist on the classic broccoli chicken casserole that the whole family will love.

  • 2 cups cooked chicken, shredded
  • 3 cups broccoli florets
  • 1 cup brown rice, cooked
  • 1 cup cheddar cheese, shredded
  • 1 can cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup breadcrumbs, for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked chicken, broccoli, brown rice, cheddar cheese, cream of chicken soup, chicken broth, garlic powder, onion powder, black pepper, and salt.
  3. Mix until well combined and pour into a greased 9×13 inch baking dish.
  4. Sprinkle breadcrumbs evenly over the top.
  5. Bake in the preheated oven for 25-30 minutes until bubbly and golden brown on top.
