Healthier Broccoli Chicken Casserole

A delicious and healthier twist on the traditional broccoli chicken casserole, featuring turkey bacon for added flavor.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup turkey bacon, cooked and crumbled
  • 4 cups broccoli florets
  • 1 cup brown rice, cooked
  • 1 can (10.5 oz) reduced-fat cream of chicken soup
  • 1 cup shredded low-fat cheddar cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine shredded chicken, turkey bacon, broccoli, brown rice, cream of chicken soup, milk, garlic powder, pepper, and salt.
  3. Fold in half of the cheddar cheese.
  4. Transfer the mixture to a greased baking dish and top with the remaining cheese.
  5. Bake for 25-30 minutes or until the cheese is melted and bubbly.

Notes

  • For extra flavor, consider adding onion or bell pepper.
  • This casserole can be made ahead of time and stored in the fridge.
