  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups chopped kale
  • 3 cups mixed vegetables (carrots, peas, corn)
  • 1 package tortellini (about 9 ounces)
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, heat the olive oil and sauté the onion and garlic until soft.
  2. Add the vegetable broth and mixed vegetables.
  3. Stir in the tortellini and kale.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the heavy cream and Italian seasoning.
  6. Season with salt and pepper to taste before serving.
