  • 1/2 teaspoon baking soda

  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup raisins or walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats, whole wheat flour, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, mix honey (or maple syrup), applesauce, and grated carrots until well combined.
  4. Combine wet and dry ingredients, then fold in raisins or walnuts if using.
  5. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes until the edges are golden.
  7. Allow to cool before serving.

Notes

  • For a vegan version, use maple syrup instead of honey.
