Herbed Couscous

Ingredients

  • 1 cup couscous
  • 3 cups chicken broth
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Cook turkey bacon in a skillet over medium heat until crispy. Remove and crumble.
  2. In the same skillet, add olive oil, broth, salt, and pepper and bring to a boil.
  3. Stir in couscous, remove from heat, cover, and let sit for 5 minutes.
  4. Fluff couscous with a fork and stir in crumbled bacon and herbs.
  5. Serve warm as a side dish.
