  • 1/2 cup grated carrots
  • 1 cup cooked ground beef or turkey
  • 1 cup taco sauce
  • 1 cup shredded cheese
  • 2 cups corn muffin mix
  • 1/2 cup milk
  • 2 large eggs

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine shredded zucchini, grated carrots, cooked ground meat, and taco sauce.
  3. In another bowl, mix together the corn muffin mix, milk, and eggs until well combined.
  4. Fold the veggie mixture into the muffin batter until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Top each muffin with a sprinkle of shredded cheese.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let cool for a few minutes before enjoying.
