High Protein Broccoli Cheddar Soup

This delicious High Protein Broccoli Cheddar Soup is rich in flavor and loaded with nutritious ingredients, including turkey bacon for an added delight.

Ingredients

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup cooked turkey bacon, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add broccoli florets and cook for another 5 minutes.
  3. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. Add heavy cream and cheddar cheese, stirring until cheese is melted and mixture is combined.
  5. Stir in cooked turkey bacon. Season with salt and pepper to taste.
  6. Blend the soup until smooth if desired, then serve hot.

Notes

  • For a thinner soup, add more chicken broth.
