Indian Shrimp and Rice

This Indian Shrimp and Rice recipe combines succulent shrimp with aromatic spices and fluffy rice for a comforting meal that is easy to prepare.

  • 1 pound shrimp, peeled and deveined
  • 1 cup basmati rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon coriander
  • 1/2 teaspoon red chili powder
  • 2 cups chicken broth
  • 1 cup peas (optional)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Stir in garlic and ginger, then add spices (cumin, turmeric, coriander, red chili powder) and cook until fragrant.
  4. Add shrimp and cook until they turn pink.
  5. Stir in the rice and mix well.
  6. Pour in chicken broth, add peas if using, season with salt, and bring to a boil.
  7. Reduce heat to low, cover, and cook for about 15 minutes or until rice is tender.
  8. Fluff rice with a fork and serve with fresh cilantro on top.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • This dish can be made with frozen shrimp; just thaw them before use.
