  • 8 ounces turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  1. Set the Instant Pot to sauté mode and add olive oil.
  2. Add turkey bacon, onion, and garlic; cook until bacon is crispy.
  3. Add crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper; stir to combine.
  4. Break lasagna noodles into thirds and add them to the pot.
  5. Seal the lid and cook on high pressure for 8 minutes.
  6. Quick release the pressure and stir in ricotta and mozzarella cheese until melted.
  7. Top with Parmesan before serving.
