Keto Creamy Broccoli Cheddar Soup

Deliciously creamy and full of flavor, this keto-friendly broccoli cheddar soup is made comforting with the addition of turkey bacon.

Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1/2 cup onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. Add olive oil and chopped onions to the pot, sauté until onions are translucent.
  3. Add broccoli florets and garlic powder, and stir to combine.
  4. Pour in chicken broth and bring to a boil. Reduce heat and let simmer until broccoli is tender.
  5. Using an immersion blender, blend the soup until smooth.
  6. Stir in heavy cream and cheese until melted. Season with salt and pepper.
  7. Serve hot, garnished with crumbled turkey bacon.

Notes

  • This soup can be made ahead of time and stored in the fridge.
  • For extra creaminess, add more cheese.
