Ingredients

  • 8 ounces turkey bacon
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 16 ounces mushrooms, sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • salt to taste
  • black pepper to taste
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add olive oil and sauté onions and garlic until translucent.
  3. Add mushrooms and cook until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in heavy cream, season with salt, pepper, and thyme.
  6. Simmer for 10 minutes. Add crumbled bacon back into the pot.
  7. Serve hot, garnished with fresh herbs if desired.

Notes

  • This soup can be made in advance and heated before serving.
  • For extra creaminess, blend a portion of the soup and mix it back in.
