Ingredients

  • 1 tablespoon coconut oil
  • 1 pound chicken breast, diced
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon red curry paste
  • 1 teaspoon fish sauce
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup spinach
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. In a large pot, heat the coconut oil over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in the red curry paste and cook for an additional minute.
  4. Add the chicken broth and coconut milk, bring to a simmer.
  5. Add bell pepper and zucchini, cook until tender.
  6. Stir in spinach and cook until wilted.
  7. Remove from heat, add lime juice and cilantro before serving.

Notes

  • For a spicier soup, add more red curry paste.
  • Store leftovers in an airtight container.
