  • 2 cups ricotta cheese
  • 3 cups marinara sauce
  • 9 lasagna noodles
  • 2 cups spinach
  • 1 cup chopped zucchini
  • 1 cup sliced bell peppers
  • 1 cup mushrooms
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a bowl, combine ricotta cheese, spinach, Italian seasoning, salt, and pepper.
  4. Spread a layer of marinara sauce in a baking dish.
  5. Layer 3 lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the zucchini, bell peppers, and mushrooms. Repeat the layers.
  6. Top with remaining noodles and marinara sauce. Sprinkle mozzarella cheese on top.
  7. Bake for 30-40 minutes until bubbly and golden.

Notes

  • Let the lasagna sit for 10 minutes before slicing.
