- 1 pound chicken breast
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 cup orzo pasta
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups kale, chopped
- 1/4 cup lemon juice
- 1 tablespoon fresh parsley, chopped
- In a large pot, heat olive oil over medium heat. Add chicken breast and cook until browned. Remove and shred.
