Lemony Chicken & Rice Soup

  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup cooked rice
  • 1 tablespoon lemon juice
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté until the vegetables are soft.
