Loaded Baked Potato Casserole

A delightful mix of creamy mashed potatoes, turkey bacon, and all the classic baked potato toppings in one hearty casserole.

  • 2 pounds potatoes, peeled and diced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 cup green onions, chopped
  • 1 cup cooked turkey bacon, crumbled
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the diced potatoes in salted water until tender, then drain.
  3. In a large bowl, mash the potatoes, then stir in the sour cream, milk, garlic powder, salt, pepper, and paprika until smooth.
  4. Fold in the cheddar cheese, turkey bacon, and green onions.
  5. Transfer the mixture to a greased casserole dish and top with additional cheese.
  6. Bake for 25-30 minutes or until golden and bubbly.

Notes

  • For a vegetarian option, you can omit the turkey bacon.
