Mexican Street Corn

This delicious Mexican Street Corn recipe combines the sweetness of corn with savory turkey bacon for a delightful twist.

  • 4 ears sweet corn
  • 4 strips turkey bacon
  • 1/2 cup mayonnaise
  • 1/2 cup crumbled cotija cheese
  • 2 tablespoons fresh lime juice
  • 1 teaspoon chili powder
  • 1/4 cup chopped fresh cilantro
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Wrap the corn in aluminum foil and grill for about 15-20 minutes, turning occasionally.
  3. While the corn is grilling, cook the turkey bacon in a skillet until crispy. Crumble and set aside.
  4. In a bowl, mix the mayonnaise, lime juice, chili powder, salt, and half of the cotija cheese.
  5. Once the corn is done, unwrap it and spread the mayo mixture over each ear of corn.
  6. Top with the crumbled turkey bacon, remaining cotija cheese, and chopped cilantro.

Notes

  • For extra flavor, try adding garlic powder to the mayonnaise mixture.
  • You can substitute regular bacon if preferred, but keep in mind it will increase the fat content.
