Middle-of-Winter Creamy Tomato Soup

This creamy tomato soup, enriched with the flavor of turkey bacon, is perfect for warming you up in the middle of winter.

Ingredients

  • 1 tablespoon olive oil
  • 3 slices turkey bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup heavy cream
  • 2 tablespoons fresh basil, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the turkey bacon and cook until crispy. Remove and chop.
  3. Add onion and garlic to the pot, sauté until soft.
  4. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  5. Bring to a simmer and cook for 15 minutes.
  6. Blend the soup until smooth.
  7. Return to heat, stir in heavy cream and chopped turkey bacon.
  8. Cook for another 5 minutes and garnish with fresh basil before serving.

Notes

  • For extra flavor, add a pinch of red pepper flakes.
  • Serve with crusty bread for a complete meal.
