- 1 tablespoon olive oil
- 3 slices turkey bacon
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 2 cups chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup heavy cream
- 2 tablespoons fresh basil, chopped
- In a large pot, heat the olive oil over medium heat.
- Add the turkey bacon and cook until crispy. Remove and chop.
- Add onion and garlic to the pot, sauté until soft.
- Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a simmer and cook for 15 minutes.
- Blend the soup until smooth.
- Return to heat, stir in heavy cream and chopped turkey bacon.
- Cook for another 5 minutes and garnish with fresh basil before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes.
- Serve with crusty bread for a complete meal.
