  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 1/4 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of lined muffin tins to form a crust.
  4. In a separate bowl, beat cream cheese, sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Blend in sour cream until fully incorporated.
  7. Pour the filling over the crusts in the muffin tins.
  8. Bake for 20-25 minutes or until set.
  9. Remove from the oven and let cool. Refrigerate for at least 2 hours before serving.

Notes

  • For a richer flavor, use mascarpone cheese instead of cream cheese.
