Nourishing Potato Soup with Caramelized Onions

A warm and comforting potato soup featuring caramelized onions and turkey bacon for a delightful twist.

Ingredients

  • 4 cups potatoes, peeled and diced
  • 1 cup onions, sliced
  • 4 slices turkey bacon
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme

Instructions

  1. In a large pot, heat olive oil over medium heat and add onions. Cook until caramelized, about 10 minutes.
  2. Add minced garlic and cook for another 1 minute.
  3. Stir in the diced potatoes and turkey bacon.
  4. Add chicken broth and bring to a boil. Reduce to a simmer and cook until potatoes are tender, about 15-20 minutes.
  5. Puree soup using an immersion blender for a creamy texture.
  6. Stir in heavy cream, salt, black pepper, and thyme. Heat through before serving.

Notes

  • For a vegetarian option, substitute turkey bacon with additional vegetables.
  • Add more cream for a richer flavor.
