One Pot Gnocchi Chicken Pot Pie

A comforting one pot meal with gnocchi and chicken.

Ingredients

  • 1 pound gnocchi
  • 2 cups cooked chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add shredded chicken and sauté for a few minutes.
  3. Stir in the mixed vegetables and cook for another couple of minutes.
  4. Add the chicken broth, garlic powder, onion powder, thyme, salt, and pepper; bring to a simmer.
  5. Stir in the gnocchi and cook until they float to the top.
  6. Pour in the heavy cream and stir until well combined.
  7. Simmer for another 5-10 minutes until thickened.

  • This meal can be made ahead and stored in the refrigerator.
