One Pot Gnocchi Chicken Pot Pie

Ingredients

  • 2 cups gnocchi
  • 1 pound chicken breast, cubed
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add cubed chicken and cook until browned.
  3. Stir in carrots and cook for a few minutes.
  4. Add chicken broth, gnocchi, salt, pepper, and thyme.
  5. Bring to a boil, then reduce to a simmer.
  6. Cook for about 10 minutes, stirring occasionally.
  7. Stir in peas and heavy cream, then cook for another 5 minutes.
  8. Remove from heat and serve warm.

Notes

  • For extra flavor, add garlic when cooking the chicken.
