One Pot Lasagna Soup

A comforting recipe that combines the flavors of lasagna in a warm soup.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 24 ounces marinara sauce
  • 4 cups chicken broth
  • 12 ounces lasagna noodles, broken
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add onion and garlic and sauté until softened.
  3. Stir in marinara sauce, chicken broth, and Italian seasoning.
  4. Bring to a boil, then add the broken lasagna noodles.
  5. Reduce heat and simmer until noodles are tender.
  6. Stir in ricotta and half of the mozzarella cheese.
  7. Top with remaining mozzarella cheese before serving.
