A delicious and creamy baked potato soup inspired by Outback Steakhouse, enhanced with turkey bacon.

  • 4 large baking potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup sour cream
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 6 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 cup chives, chopped

Instructions

  1. Preheat oven to 400°F (200°C). Poke holes in the potatoes and bake for about 45-60 minutes until tender.
  2. Let the potatoes cool, then scoop the insides into a bowl and mash.
  3. In a large pot, melt butter over medium heat. Stir in flour to make a roux.
  4. Gradually add chicken broth while whisking to avoid lumps. Bring to a simmer.
  5. Add the mashed potatoes, sour cream, garlic powder, onion powder, and black pepper. Stir until combined.
  6. Add in the chopped turkey bacon and cook for another 10 minutes.
  7. Serve hot, topped with cheddar cheese and chives.

  • For a vegetarian option, omit the turkey bacon.
