- 4 large baking potatoes
- 1 cup cooked turkey bacon, chopped
- 1 cup sour cream
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 6 cups chicken broth
- 1 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 cup chives, chopped
- Preheat oven to 400°F (200°C). Poke holes in the potatoes and bake for about 45-60 minutes until tender.
- Let the potatoes cool, then scoop the insides into a bowl and mash.
- In a large pot, melt butter over medium heat. Stir in flour to make a roux.
- Gradually add chicken broth while whisking to avoid lumps. Bring to a simmer.
- Add the mashed potatoes, sour cream, garlic powder, onion powder, and black pepper. Stir until combined.
- Add in the chopped turkey bacon and cook for another 10 minutes.
- Serve hot, topped with cheddar cheese and chives.
