- 4 salmon fillets
- 2 cups orzo pasta
- 1 cup heavy cream
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- Cook the orzo according to package instructions, then drain and set aside.
- In a skillet, heat olive oil over medium heat. Season salmon fillets with salt and pepper, then add to the skillet.
- Cook salmon for 4-5 minutes on each side or until cooked through.
- Remove salmon and set aside. In the same skillet, add garlic, sauté briefly, then stir in heavy cream, lemon juice, and zest.
- Add the cooked orzo to the sauce, stirring to combine. Adjust seasoning as needed.
- Serve salmon over a bed of creamy lemon orzo, garnished with parsley.
