  • 1 pound pasta (rigatoni or penne)
  • 2 medium eggplants, diced
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh basil, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package instructions; drain.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add diced eggplant and cook until softened.
  4. Stir in crushed tomatoes, red pepper flakes, salt, and black pepper; simmer for 10 minutes.
  5. Mix in the cooked pasta and half of the chopped basil.
  6. Serve topped with ricotta, Parmesan, and remaining basil.
