  • 1 large eggplant
  • 3 cups tomato sauce
  • 1 cup ricotta salata

Instructions

  1. Dice the eggplant and sprinkle with salt, then let it sit for 30 minutes to remove excess moisture.
  2. Rinse the eggplant and pat it dry.
