  • 1 cup cottage cheese
  • 1 cup diced peaches
  • 2 cups whole wheat flour
  • 1/2 cup honey
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together cottage cheese, diced peaches, honey, and vegetable oil.
  3. In another bowl, combine whole wheat flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. In a separate bowl, beat the eggs and then fold them into the muffin batter.
  6. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow to cool for a few minutes before removing from the tin.

Notes

  • For added flavor, you can sprinkle cinnamon on top before baking.
