Roasted Carrots with Whipped Ricotta and Hot Honey

Experience the delightful combination of roasted carrots paired with creamy whipped ricotta and a drizzle of sweet hot honey.

Ingredients

  • 1 pound carrots, peeled and cut into sticks
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • Fresh herbs for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the carrots with olive oil, salt, and pepper in a large bowl.
  3. Spread the carrots on a baking sheet and roast for 25-30 minutes or until tender and caramelized.
  4. Meanwhile, in a bowl, mix the ricotta, honey, hot sauce, and lemon juice until smooth.
  5. Once the carrots are done, remove them from the oven and let them cool slightly.
  6. Spread the whipped ricotta mixture on a serving platter and top with the roasted carrots.
  7. Drizzle extra honey over the top and garnish with fresh herbs.

Notes

  • For a spicier version, increase the amount of hot sauce.
  • This dish can be served warm or at room temperature.
