  • 1 large red bell pepper
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the tomatoes and bell pepper in half and place them on a baking sheet.
  3. Drizzle with olive oil, salt, and pepper.
  4. Roast in the oven for 25-30 minutes, until the vegetables are tender.
  5. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.
  6. Add the roasted vegetables and vegetable broth to the pot.
  7. Bring to a simmer and cook for an additional 10 minutes.
  8. Blend the mixture in a blender until smooth and creamy.
  9. Stir in fresh basil before serving.
