- 4 large Russet potatoes
- 1 pound ground beef or lamb
- 1 cup frozen peas and carrots
- 1 cup beef broth
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 4 tablespoons butter
- 1/2 cup milk
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake for about 45 minutes until tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat. Add ground beef or lamb, cooking until browned.
- Stir in peas, carrots, beef broth, tomato paste, Worcestershire sauce, salt, and pepper. Simmer for about 10 minutes.
- Once the potatoes are done, let them cool slightly, then cut them in half and scoop out some of the insides.
- Mix the scooped potato with butter and milk, then fold in the meat mixture.
- Fill the potato skins with the mixture and top with shredded cheddar cheese.
- Return to the oven and bake for an additional 15 minutes or until the cheese is melted and bubbly.
