  • 4 large Russet potatoes
  • 1 pound ground beef or lamb
  • 1 cup frozen peas and carrots
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 tablespoons butter
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for about 45 minutes until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add ground beef or lamb, cooking until browned.
  4. Stir in peas, carrots, beef broth, tomato paste, Worcestershire sauce, salt, and pepper. Simmer for about 10 minutes.
  5. Once the potatoes are done, let them cool slightly, then cut them in half and scoop out some of the insides.
  6. Mix the scooped potato with butter and milk, then fold in the meat mixture.
  7. Fill the potato skins with the mixture and top with shredded cheddar cheese.
  8. Return to the oven and bake for an additional 15 minutes or until the cheese is melted and bubbly.

  • For added flavor, consider using herbs like thyme or rosemary in the meat mixture.
  • You can substitute the meat for lentils for a vegetarian version.
