Shepherd’s Pie Baked Potatoes are a delicious and hearty twist on the classic dish, combining savory ground meat and vegetables with fluffy baked potatoes.

  • 4 large russet potatoes
  • 1 pound ground beef or lamb
  • 1 cup frozen peas
  • 1 cup chopped carrots
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 4 tablespoons butter
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and pierce them several times with a fork. Bake for about 45-60 minutes until tender.
  3. In a large skillet over medium heat, cook the ground meat until browned. Drain excess fat.
  4. Add the onions and garlic to the skillet, cooking until onions are soft.
  5. Stir in the carrots, peas, Worcestershire sauce, thyme, and beef broth. Allow the mixture to simmer for about 10 minutes until vegetables are tender.
  6. Once the potatoes are done, slice them open and fluff the insides with a fork. Mix in the butter and milk.
  7. Fill each potato with the meat and vegetable mixture, then top with shredded cheddar cheese.
  8. Return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
