- 4 large russet potatoes
- 1 pound ground beef or lamb
- 1 cup frozen peas
- 1 cup chopped carrots
- 1 cup chopped onions
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 cup beef broth
- 1 cup shredded cheddar cheese
- 4 tablespoons butter
- 1/2 cup milk
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and pierce them several times with a fork. Bake for about 45-60 minutes until tender.
- In a large skillet over medium heat, cook the ground meat until browned. Drain excess fat.
- Add the onions and garlic to the skillet, cooking until onions are soft.
- Stir in the carrots, peas, Worcestershire sauce, thyme, and beef broth. Allow the mixture to simmer for about 10 minutes until vegetables are tender.
- Once the potatoes are done, slice them open and fluff the insides with a fork. Mix in the butter and milk.
- Fill each potato with the meat and vegetable mixture, then top with shredded cheddar cheese.
- Return to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.
