- 4 large russet potatoes
- 1 pound ground beef or lamb
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup frozen peas
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 4 tablespoons butter
- 1/2 cup milk
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake for about 45-60 minutes until tender.
- In a skillet, brown the ground meat with onions and carrots over medium heat until cooked through.
- Add garlic, peas, tomato paste, beef broth, Worcestershire sauce, thyme, salt, and pepper. Simmer for 10 minutes.
- Once the potatoes are done, cut them open and scoop out some of the flesh into a bowl.
- Mix the potato flesh with butter and milk, then spoon it back into the potatoes.
- Top the filled potatoes with the meat mixture and sprinkle cheddar cheese on top.
- Bake for an additional 10-15 minutes until the cheese is melted and bubbly.
