Shortbread Linzer Cookies with Raspberry Jam

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large egg yolks
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup raspberry jam
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg yolks one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cornstarch, and salt. Gradually add to the butter mixture until well combined.
  5. Roll out the dough on a floured surface to about 1/4 inch thick.
  6. Cut into shapes and cut out centers for half of the cookies.
  7. Place cookies on a parchment-lined baking sheet and bake for 12-15 minutes.
  8. After cooling, spread raspberry jam on the solid cookies and top with the cookies with cutouts.
