Slow Cooker Chicken Enchilada Casserole

This slow cooker chicken enchilada casserole is the ultimate comfort food that combines flavorful ingredients into a delicious dish.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can red enchilada sauce
  • 2 cups black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese
  • 8 corn tortillas, cut into strips
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Combine the shredded chicken, black beans, corn, enchilada sauce, cumin, chili powder, garlic powder, and salt and pepper in the slow cooker.
  2. Layer half of the tortilla strips on top of the mixture, followed by half of the cheese.
  3. Repeat the layers with the remaining tortilla strips and cheese.
  4. Cook on low for 4-6 hours or until heated through and the cheese is melted.
  5. Serve hot, garnished with fresh cilantro or avocado if desired.

Notes

  • For added flavor, you can sauté onions and peppers before adding to the slow cooker.
