Slow Cooker Pot Roast

  • 2 pounds beef chuck roast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium carrots, chopped
  • 3 potatoes, quartered
  • 1 onion, chopped
  • 2 cups beef broth
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme

Instructions

  1. Season the beef chuck roast with salt and black pepper.
  2. Place the carrots, potatoes, and onion at the bottom of the slow cooker.
  3. Put the seasoned roast on top of the vegetables.
  4. In a bowl, mix together beef broth, garlic, Worcestershire sauce, and thyme.
  5. Pour the mixture over the roast.
  6. Cover and cook on low for 8 hours or high for 4 hours.
  7. Once done, shred the meat with two forks and serve with vegetables.
