Slow Cooker Red Beans and Rice

A hearty and flavorful dish combining red beans, turkey bacon, and chicken ham simmered to perfection in a slow cooker.

  • 1 cup red beans
  • 4 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 cups cooked rice

Instructions

  1. Rinse and soak the red beans overnight.
  2. In a slow cooker, combine the soaked beans, turkey bacon, chicken ham, onion, garlic, and bell pepper.
  3. Add chicken broth, thyme, paprika, black pepper, and cayenne pepper to the slow cooker.
  4. Cover and cook on low for 6-8 hours or until beans are tender.
  5. Serve over cooked rice.

Notes

  • Adjust seasoning according to taste.
  • For a vegetarian option, you can skip the turkey bacon and chicken ham.
