Slow-Cooker Loaded Broccoli & Chicken Soup

  • 4 cups chopped broccoli
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a slow cooker, combine the chicken, broccoli, onion, garlic, and chicken broth.
  2. Cover and cook on low for 6-8 hours, or until the chicken is cooked through.
  3. Remove the chicken, shred it, and return it to the slow cooker.
  4. Stir in the heavy cream, salt, and pepper.
  5. Cook for an additional 30 minutes before serving.
