Smothered Chicken and Rice

  • 4 pieces chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season chicken with paprika, salt, and pepper, and brown in the skillet for about 5-7 minutes on each side.
  2. Remove chicken and set aside. In the same skillet, add diced onion and garlic, sauté until translucent.
  3. Add rice to the skillet, stirring to coat with the onion and garlic mixture.
  4. Pour in chicken broth and bring to a boil. Reduce heat and place the browned chicken on top of the rice.
  5. Cover and simmer for 25-30 minutes until the rice is cooked and chicken is tender.
  6. Let rest for a few minutes before serving.

Notes

  • For added flavor, marinate the chicken in spices overnight.
  • Serve with green beans or a side salad for a complete meal.
