- 4 pieces chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- In a large skillet, heat olive oil over medium heat. Season chicken with paprika, salt, and pepper, and brown in the skillet for about 5-7 minutes on each side.
- Remove chicken and set aside. In the same skillet, add diced onion and garlic, sauté until translucent.
- Add rice to the skillet, stirring to coat with the onion and garlic mixture.
- Pour in chicken broth and bring to a boil. Reduce heat and place the browned chicken on top of the rice.
- Cover and simmer for 25-30 minutes until the rice is cooked and chicken is tender.
- Let rest for a few minutes before serving.
